Eating Safe

Dairy-free, gluten-free, low-FODMAP

Where to eat

Sunday, Posana, downtown Asheville. A dedicated 100% gluten-free kitchen, but the menu is dairy-heavy, so for the milk allergy you must call ahead: (828) 505-3969. Say "true milk allergy, cross-contact," ask them to leave out garlic and onion, and have the chef note your table. Entrées run about $28–42, so plan on $160–180 for four.

Sushi, any night. Naturally dairy-free and low-FODMAP friendly. Ask for tamari instead of soy sauce, skip imitation crab, and skip the miso soup and edamame.

Monday, Bryson City. The easy picks don't work: City Lights is in Sylva and closes at 3, and the Everett bistro is closed Mondays. Best option is Bryson City Brewing, call (828) 538-0085 about gluten-free and dairy-free, or just do a cooler dinner in the room.

Tuesday, Franklin. Thin on options, so a cooler or room dinner is easiest. Caffè Rel is a French bistro (butter and shallots in everything), so only go if you call ahead to confirm Tuesday hours and a dairy-free, no-garlic plate.

Proteins

  • Prosciutto or plain GF deli meat (no garlic/onion), hard-boiled eggs, canned tuna/salmon, GF garlic-free jerky

Produce (low-FODMAP)

  • Carrots, cucumber, red/yellow/orange bell pepper (not green), cherry tomatoes, green beans, zucchini (keep to ~⅓ cup), lettuce, olives, baby potatoes
  • Strawberries, blueberries, oranges, kiwi, pineapple, cantaloupe, firm/unripe bananas, skip grapes (only 2 are low-FODMAP!), onion, garlic, apples, pears, watermelon, mango, cherries

Bases & snacks

  • Certified-GF bread (no chicory/inulin/honey), corn tortillas, rice cakes, plain chips, natural peanut butter, mustard
  • Peanuts, walnuts, pecans, popcorn, 85%+ dark chocolate, Enjoy Life brand is GF + DF

Drinks

  • Water; unsweetened almond milk (best, up to 1 cup) , check the label for inulin/chicory. Lactose-free cow milk still has casein; oat milk isn't reliably GF; rice milk is OK in small pours but often has added sweeteners.

Three nights, booked direct

All under ~$130, each with a pool, mini-fridge, and two queen beds. Book on the hotel's own site, no third party. Lock in Bryson City first; it's the tightest.
